Oh, I've seen in person few of these.
Basically each pixel is a small hologram (holopixel?). Yet, although they exhibit full paralax they look bad from close due to the visible pixels. It's like a very low resolution hologram.

That's a question of keeping the printing times practical.
When you are talking about spending enough money to use billion watt peak power pulse lasers to record 1000 feet objects you could record smaller hogels as well. Hell, with that kind of money you could record a large "true" fringe hologram with an e-beam mask maker (it is possible, though harder, to compute the actual fringes from a 3D model as well rather than just recording hogels).
