I know how to do them with Holographic Plate but... its possible to make them with Cellulose Acetate :eh: ?

Yes, sort of. Tri-acetate cellulose was a common film base for holography because it was much less polarization sensitive than polyester film.
Then suppliers stopped making it. And here we are. Polyester film bases have apparently improved, but I don't know how bad they are
for polarization. The hologram itself is typically made in a thin layer of gelatin or photopolymer coated on the film base. If you could directly vary the
refractive index of cellulose to make a hologram, that would be cool, but it would be hard to do, since it's already polymerized into a film sheet.

You can record a hologram on many materials. If you are trying a new one, place it between crossed polarizers to see if it is birefringent. If it is it can be a problem to use but not impossible.
