The following is the first 5 pages (of 15, two more posts to follow) of the "Gelatin" entry in the Encyclopedia of Polymer Science and Technology, 1965, John Wiley & Sons, Inc. This is a huge, multi-volume encyclopedia I found in the physics library at Notre Dame.
