Does anybody know what kind of safe light can be used when exposing and developing RGB ( full-color ) Holograms like these?

If you're making full color holograms, then the safelight will be the least of your worries  If you have a sensitivity curve for the material, you can refer to that, but probably the best option would be to use a color to which the eye is very sensitive, such as yellow, and keep it away from the emulsion as much as possible.

Very dim red light. Maybe use a 10nm bandwidth interference filter for maybe 680 or 690nm with an MR-16 or MR-11 based framing projector to get enough light through it. Or a very red LED and collimating lens behind the filter.

I keep my safe light for PFG-03C under the table. It makes it had to set up but all of the light hitting the plate bounces off the walls of the lab before reaching the plate so fog is minimal.
